- For the filling: ¾ cup brown sugar
- 1 tbsp ground cinnamon
- 2 tbsp melted butter
- For the glaze: 1 cup powdered sugar
- 2–3 tbsp milk
- ½ tsp vanilla extract
Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a bowl, whisk flour, baking powder, baking soda, and salt.
- In another bowl, cream butter, brown sugar, and granulated sugar until light and fluffy.
- Beat in eggs and vanilla until smooth.
- Gradually mix in dry ingredients until combined.
- In a small bowl, mix filling ingredients until crumbly.
- Scoop dough, flatten slightly, add a spoonful of filling in the center, and top with another small piece of dough. Seal edges gently.
- Bake for 10–12 minutes until lightly golden. Cool completely.
- Whisk glaze ingredients and drizzle over cooled cookies.
Notes
- Line sheets with parchment for easy release.
- Cool cookies completely before glazing to prevent the glaze from running.
- Store in an airtight container at room temperature for up to 3 days, or freeze for longer storage.
- If dough is sticky, chill it 15–20 minutes before shaping.
