- 1 lb ground beef
- 1 tbsp olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp chili powder
- 1 tsp ground cumin
- ½ tsp paprika
- ½ tsp salt
- ½ tsp black pepper
- 2 cups red enchilada sauce
- 10–12 corn tortillas, cut into strips
- 2 cups shredded cheddar or Mexican blend cheese
- 2 tbsp chopped cilantro or green onions (optional, for garnish)
Instructions
- Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
- Heat olive oil in a skillet over medium heat. Add ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat if needed.
- Add onion and garlic and sauté for 2–3 minutes until softened.
- Stir in chili powder, cumin, paprika, salt, and black pepper.
- Pour in 1 cup of enchilada sauce and simmer for 2 minutes.
- Layer half of the tortilla strips in the baking dish. Top with half of the beef mixture and 1 cup of cheese.
- Repeat layers with remaining tortillas, beef mixture, enchilada sauce, and cheese.
- Bake uncovered for 25–30 minutes, or until bubbly and the cheese is melted.
- Let rest for 5 minutes, garnish if desired, and serve warm.
Notes
- You can substitute ground turkey for beef for a lighter version.
- Use gluten-free corn tortillas to keep the dish gluten-free.
- Garnish with chopped cilantro or green onions for extra brightness.
- Let the casserole rest for 5 minutes before serving to help it set.
