- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 (10 oz) can red enchilada sauce
- 1 cup cooked rice
- 1 (15 oz) can black beans, drained and rinsed
- 1 cup corn (fresh, frozen, or canned)
- 1 tsp chili powder
- 1 tsp cumin
- ½ tsp paprika
- Salt and pepper, to taste
- 2 cups shredded Mexican blend or cheddar cheese
- ½ cup sliced green onions
- ¼ cup chopped cilantro
Instructions
- Preheat oven: Set to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
- Cook the beef: Heat olive oil in a skillet over medium heat. Add ground beef and onion. Cook until the beef is browned and onion is tender. Drain grease.
- Season: Add garlic, chili powder, cumin, paprika, salt, and pepper. Cook 1 minute until fragrant.
- Combine filling: Stir in enchilada sauce, cooked rice, black beans, and corn. Mix well until everything is coated and heated through.
- Assemble the casserole: Spread the mixture evenly in the baking dish. Top with shredded cheese.
- Bake: Bake for 15–20 minutes, or until the cheese is melted and bubbly.
- Serve: Garnish with cilantro and green onions. Serve warm with sour cream, jalapeños, or extra enchilada sauce if desired.
