- 1 cup apple cider
- 1 3/4 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp salt
- 2 tbsp unsalted butter, melted
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1 large egg
- 1/2 cup buttermilk
- 1 tsp vanilla extract
- For coating: 1/2 cup granulated sugar, 1 tsp cinnamon, 3 tbsp unsalted butter, melted
Instructions
- Preheat oven to 350°F (175°C). Grease a donut pan.
- In a small saucepan, simmer apple cider over medium heat until reduced to 1/2 cup. Let cool.
- In a bowl, whisk flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In another bowl, mix melted butter, brown sugar, granulated sugar, egg, buttermilk, vanilla, and reduced cider.
- Combine wet and dry ingredients until just mixed. Spoon batter into donut pan, filling 3/4 full.
- Bake 12-14 minutes, until a toothpick comes out clean. Let cool slightly.
- Mix cinnamon and sugar in a bowl for coating.
- Dip each donut in melted butter, then roll in cinnamon sugar. Serve warm.
Notes
- Be careful not to overmix the batter to keep donuts tender.
- Let the cider reduce completely to 1/2 cup for flavor concentration.
- Donuts are best served warm the day they’re baked.
