- ½ tsp baking powder

- ¼ cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 cup finely diced apple (peeled)
- ¼ cup flour
- 2 tbsp brown sugar
- 2 tbsp cold butter, cubed
- ¼ tsp cinnamon
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In a large bowl, cream butter, brown sugar, and granulated sugar until light and fluffy. Add egg and vanilla; mix well.
- Gradually add dry ingredients to the wet mixture, mixing until combined. Fold in diced apples.
- In a small bowl, make the crumb topping by mixing flour, brown sugar, and cinnamon. Cut in cold butter with a fork until the mixture resembles coarse crumbs.
- Scoop 2 tablespoons of cookie dough per cookie onto the baking sheet. Sprinkle crumb topping over each.
- Bake for 11–13 minutes or until edges are golden and centers are set.
- Cool for 5 minutes on the pan, then transfer to a wire rack to cool completely.
Notes
- Soft cookies with a tender crumb; do not overmix after adding the apples to keep them moist.
- Chill the dough for easier scooping if desired.
- Store cookies in an airtight container at room temperature for up to 3 days.
- These cookies can be frozen baked or unbaked for longer storage.
