  • ½ cup sun-dried tomatoes, finely chopped

  • ¼ cup green olives, chopped
  • ¼ cup black olives, chopped

  • 2 tbsp fresh parsley or basil, finely chopped
  • 1 tsp Italian seasoning
  • ¼ tsp garlic powder
  • ¼ tsp black pepper
  • Crackers, crostini, or fresh veggies, for serving

Instructions

  1. In a large mixing bowl, combine softened cream cheese, sun-dried tomatoes, roasted red peppers, olives, onion, herbs, Italian seasoning, garlic powder, and pepper. Mix until evenly blended.
  2. Transfer the mixture onto a large piece of plastic wrap. Shape it into a log or oval using your hands, then tightly wrap it in plastic.
  3. Chill in the refrigerator for at least 2 hours (or overnight) to firm up and allow flavors to meld.
  4. When ready to serve, unwrap the log and place it on a platter. Garnish with extra chopped herbs, a drizzle of olive oil, and optional sliced olives for decoration.
