- 1 lb ground beef
- 1 tbsp olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 3 medium potatoes, diced
- 3 carrots, sliced
- 2 celery stalks, chopped
- 1 (14.5 oz) can diced tomatoes
- 3 cups beef broth
- 1 tbsp tomato paste
- 1 tsp Worcestershire sauce
- ½ tsp dried thyme
- ½ tsp paprika
- Salt and pepper, to taste
- 1 cup frozen peas or green beans (optional)
- Fresh parsley, for garnish
Instructions
- Cook the beef: In a large pot or Dutch oven, heat olive oil over medium heat. Add ground beef and cook until browned, breaking it apart as it cooks. Drain excess grease.
- Add vegetables: Stir in onion, garlic, carrots, and celery. Cook for 3–4 minutes until fragrant and slightly softened.
- Build the stew: Add diced potatoes, tomatoes (with juice), tomato paste, beef broth, Worcestershire sauce, thyme, paprika, salt, and pepper. Stir well.
- Simmer: Bring to a boil, then reduce heat to low. Cover and simmer for 25–30 minutes, stirring occasionally, until vegetables are tender.
- Add peas: Stir in peas or green beans and cook for another 5 minutes.
- Serve: Garnish with parsley and serve warm with crusty bread or biscuits for the ultimate comfort meal.
Notes
- For a thicker stew, mash a few potatoes directly in the pot during the simmering stage.
- To make this gluten-free, ensure the Worcestershire sauce is gluten-free or omit it.
- Leftovers refrigerate well for 2–3 days or can be frozen for longer storage.
